First, we smoke the eggplant, remove the skins and then mix with a blend of honey, lemon and garlic and some seasoning. Babaganoush is great as dip with chips or vegetables, use in place of mayo on a sandwich (I like roast beef), try it as a salad dressing or pair it up with any other side dish like an asparagus.
